Die Arbeitsgruppe Lebensmittelchemie beschäftigt sich mit bioaktiven und funktionellen Lebensmittelinhaltsstoffen. Grundlegend für die Studien ist eine eindeutige chemische Charakterisierung der aktiven Moleküle durch modernste instrumentell–analytische und bioanalytische Verfahren. Die Aktivität wird anschließend an kultivierten Zellen oder in Zusamenarbeit mit der Universitätsklinik in Humanstudien ermittelt.
