研究领域
研究方向集中在食品微生物及其工业化发酵生产,通过实验室理论研究及实践探索,最终实现产品的工业化生产,产品走进千家万户,提高人们的生活品质是我们追求的目标。目前研究分为如下两个方面:
1.天然防腐保鲜
利用微生物特别是益生菌菌体及其代谢物的抑菌功效,进行食品的天然防腐保鲜的相关研究,旨在替代食品中常用的化学防腐剂,目前已经实现了工业化生产。
2.抗冻保护
微生物及植物在生长过程中,遭受非生物胁迫时,会产生具有抗冻保护的物质,如多肽、蛋白及多糖,能够减少食品、细胞及生物个体在冻存过程中受到的冷冻伤害,改善食品品质,提高生物活性,从而发挥抗冻保护作用,目前主要从事相关理论及产品的开发工作。
