个人简介
致力于食品功能活性物递送增效技术及健康效应评价研究:针对食源活性物功效发挥的限制性因素,特异性地制备递送增效体系以达到健康效应最大化的目的。研究聚焦新型递送体系的创建研究、结构解析及构效关系研究、增效机制及健康效应调控研究,以及以上基础理论在功能食品、活性包装领域的应用研究。
现为广东省珠江人才引进海外青年英才团队带头人、广东省青年珠江学者、广东省功能食品活性物重点实验室副主任。近五年发表相关SCI论文60余篇(其中第一/通讯作者SCI论文28篇,高引论文3篇),累计IF 超170, 他引超500次,出版英文专著章节1部, 第一发明人申请专利14件,已获授权4件。近五年主持课题项目包括广东省珠江人才引进海外青年英才团队项目、广东省食品科学青年珠江学者岗位计划项目、国家重点研发计划项目子课题、国家自然科学基金青年基金、广州市民生科技攻关项目、广东省教育厅特色创新项目、广东省高水平大学建设项目。

研究领域
1)食源活性物的稳态化及递送增效体系的创建新技术研究:“量体裁衣”解决活性物水溶性差、稳定性差、跨膜转运效率低、首过效应强、突释等问题,为膳食补充剂、日化、活性包装制品提供稳态化、高载量、缓控释和增效的创新技术。系列工作被遴选为2015年美国化学会农业与食品学部研究亮点;系列创建技术被2018年食品化学百科全书收录。
2)递送增效体系的构效关系解析新方法研究:采用“他山之石”突破递送体系组装机制、多级结构、构效关系的解析方法难点。其中,计算机仿真模拟、X射线小角衍射分析等交叉学科分析方法提高了递送体系结构解析的效率与精度,特色和优势明显。研究获美国国立卫生研究院项目资助,成果被国内外同行采用;系列方法创新在Adv. Colloid Interface Sci.上发表高影响力文章。
3)递送体系的增效机制与健康效应调控新理论研究:“承前启后”补足增效机制证据链条缺失,从递送体系的结构演变、活性物跨膜转运及代谢全过程的证据链角度完善递送体系的增效机制。并率先开展递送体系介导的健康效应调控研究,突破以“生物利用度最大化”为增效“黄金评价指标”的理论现状。相应观点在农化(学科TOP1期刊)发表的评论文章中首次指出,具有显著的理论创新价值。
4)功能食品、活性包装领域的应用转化效果:乳液基递送体系在浊度功能饮料、营养素共递送制剂、益生菌制剂开发方面有应用前景,已公开核心发明专利技术2件;纳米粒子基上消化道吸收增强型递送制剂载药量可达5%,有效提高水不溶性功能活性物的消化吸收效率;可食性膜控释递送技术获授权专利2件,公开专利3件,形成中试生产线一条,开发了具有不同阻湿强度、缓释时效的系列活性物控释膜产品并形成应用示范。
