Prudence Bramwell's research interests have included food microbiology, especially the use of molecular and cultural methods to diagnose pathogens in food, bio-protective properties to food pathogens in fresh salad products, ultrasonics and microorganisms, and probiotic bacteria (lactobacilli and bifidobacteria) in foods and in the gut.
