Interfacial Water
Water interfacial layer, with either with air, solid or another liquid, is fundamentally different to water in the bulk. Since the interfacial zone is limited to few molecular layers, i.e. < 1 nm, the layer is not fully understood. Yet the properties of these thin interfacial layers can produce fascinating effects at micro-scale with great engineering applications.
