Chemical Engineering

Level 1: I teach and research the relationship between what food materials are made of and the way they move. Level 2: I study the interaction between chemistry and rheology in food products and ingredients that influences food texture, digestibility and processing characteristics. Level 3: The implications of chemical and physical structure on a molecular scale for enzymic and rheological processes.
