研究领域
基于天然产物活性和功能因子的化学结构与生物活性,在优化提取、分离和纯化工艺基础上,通过细胞、动物模型等体内外实验,蛋白/基因组学技术结合构效关系解析,开展分子营养学、功能性食品及果蔬品质与代谢工程等领域的理论基础及开发应用研究。主要集中在以下三个方面:(1)功能因子研究及活性评价:构效关系解析、体内外生物活性研究、与生物大分子的相互作用及调控信号通路机制研究。(2)天然产物与食品新资源开发利用:活性成分提取及工艺优化,分离纯化、结构鉴定,生物活性及作用机制研究,功能食品研究与开发。(3)果蔬品质与代谢工程研究。
