研究领域
1. 工业微生物(Industrial Microbiology)
(1)微生物资源多样性研究和功能分析:采用分子生物学和生物信息学技术,对我国传统发酵食品中的微生物种类的多样性进行研究,研究微生物菌群与食品发酵之间的关系。从发酵食品中分离乳酸菌、醋酸菌、芽孢杆菌、酵母等,对这些微生物的培养特性、代谢产物等进行分析,筛选出有工业和食品用途的微生物菌种。
(2)工业发酵技术研究:利用掌握的微生物资源,研发发酵剂,研究发酵动力学和发酵过程控制技术,建立相应的下游处理技术。研究重点是精细发酵制品的生产,包括细菌素、微生物纤维素、赤藓糖醇、工业酶等。
2. 食品生物技术(Food Biotechnology)
野生微生物菌种代谢产物的产量往往比较低,不能直接用于工业化生产,除采用传统化学和物理诱变技术进行微生物育种外,采用基因工程技术对菌种进行改造。目前主要在对细菌素和工业酶分子生物学研究基础上,克隆相关基因,进行异源表达,以期获得目标产物的高效表达,用于工业生产。
3. 食品安全(Food Safety)
(1)乳酸菌食品防腐剂研究:研究乳酸菌及其细菌素作为食品防腐剂用于食品防腐的效果。研究重点是乳酸片球菌及其产生的细菌素作为食品防腐剂,提高食品安全性的效果评价。研究乳酸片球菌作为饲料添加剂,以减少饲料中抗生素的使用量和保护动物健康效果的评价。
(2)食品中微生物快速检测技术研究:采用纳米材料量子点、光子晶体及分子印迹技术检测食品安全微生物及其他物质,包括纳米材料合成、标记和目标物检测,对检测技术效果进行评价。
