个人简介
现受聘为中国海洋大学食品科学与工程学院教授。同时受聘为中国海洋大学“山东省‘万人计划’第一层次”特聘教授、“泰山学者”海外特聘教授、“筑峰人才工程”岗位第二层次特聘教授。以第一、通讯作者身份发表SCI论文100余篇,被引用2000余次,其中Nucleic Acid Res.,Angew. Chem. Int. Ed.,JACS,Small等权威期刊发表论文20余篇,成果曾被Nature报道。主持国家自然科学基金面上项目、山东省与国家自然科学基金联合基金、省自然科学基金等项目。

§ 科研成果
1)核酸消化代谢与营养评价
核酸是遗传信息载体,也是宏量营养素。对食源性核酸的消化代谢和生理功能研究,是指导不同人群和生物合理摄食核酸的基础。研究包括:①核酸的消化吸收代谢途径;②核酸的生物利用和营养评价;③特殊人群的膳食调控和产品开发。
代表成果:①研究团队发现,核酸可以在人、猪、鱼等多种生物胃中消化,
并且这种消化作用主要由胃蛋白酶引起;②提出了核酸消化始于胃而非小
肠的新观点,引发了我们对人和动物中核酸消化代谢途径的新思考;
③基于核酸消化代谢新理论,形成核酸膳食指导、功能食品。
专利:一种低嘌呤牡蛎罐头及其制备方法。

2)新型核酸检测和食品溯源技术的开发与应用
核酸蕴含着丰富而神秘的生物信息,且具有多种生物功能。核酸检测技术因其高特异性和高灵敏度而成为食品安全检测和食品溯源技术的重要手段之一。研究包括:①超分支滚环扩增、连接介导PCR等核酸扩增技术及产物的可视化检测技术探究;②核酸扩增技术在食品安全、食品溯源及基因检测中的应用。
代表成果:①巧妙利用DNA发卡结构,研发了多项液态食品溯源技术;②通过无引物扩增和聚合酶-内切酶-无引物快速扩增,实现了对DNA隐形条形码的3分钟快速检测,为液态食品溯源技术提供了技术支持。

3)新型核酸结构与核酸新材料
核酸类物质不仅是重要的遗传物质,也是重要的结构物质之一,对新型核酸结构与核酸新材料的研究具有重要的理论意义和应用价值。研究包括:①DNA/壳聚糖纳米组装体的构建及其对生物活性物质包埋、递送、缓控释;②基于天然核酸的复合膜材料及其在抑菌、愈创方面的应用;③含左螺旋结构的环状DNA的制备及应用。
代表成果:①制备了虾青素纳米分散体系,使虾青素以H/J聚集体形式均匀、稳定分散于水性基质中,呈现橘/粉紫色两种颜色,同时提高其生物利用率;②环状DNA是构建DNA纳米结构、功能性核酸以及滚环扩增检测等所需的“核心”部件;③应用环状DNA制备了各种DNA套环结构,为分子机器的构建提供了多种思路;④通过两个序列互补的DNA环相互缠绕,制备了生理条件下稳定存在的左螺旋DNA,开拓了左螺旋DNA研究的新纪元。
