研究领域

结合食品科学、细胞生物学、微生物学及酶工程学等学科领域的理论与技术,开展炎症与信号通路、脂溶性植物化合物的吸收代谢机制、食品成分的功能评价等方面的研究工作,尤其在食品中功能性组分的纯化、鉴定与改性;植物化合物影响哺乳动物细胞增殖,肠道健康和机体内稳态的分子机制研究
