个人简介

石玉刚,男,1980年6月生,湖北郧县人,博士,副教授,硕士生导师。2009年3月获江南大学博士学位,并任职于浙江工商大学食品与生物工程学院食工系,2011-2012年前往台湾中正大学生化研究所进行有关新型功能离子液体的设计合成及生物应用的博士后研究。2014-2015年获国家留学基金委资助前往多伦多大学(University of Toronto)化学系进行有关绿色有机合成的研究。

研究领域

1)新型天然抑菌剂、防腐剂、稳定剂在食品工业领域中的应用;特别是两亲酚酸类衍生物的生物法制备及其在水产品(鲟鱼及鱼子、南极磷虾油等)加工及贮藏中的应用研究; 2)非水介质中的生物转化,重点研究糖脂及酚酸酯的生物法制备; 3)食品领域功能离子液的合成及生物应用研究
