个人简介

张虹,女,1962年8月出生于北京,博士,教授,博士生导师。1985年毕业于杭州商学院(现浙江工商大学),于2004年获浙江大学化学博士学位。曾作为访问学者赴美国农业部南方研究中心从事研究工作。1995年12月起任职于浙江工商大学食品与生物工程学院。 

研究领域

(i) 食品质量与安全,利用液质联用、气质联用及免疫分析等手段分析及控制食品中的有毒有害成分。如:食品中各种抗生素类、食品添加剂、多环芳烃类等的残留物质及代谢物质分析;双酚A等环氧衍生物在罐头食品涂料、内容物中含量及迁移规律的研究;辐照食品的分析及安全评价等; (ii) 功能因子评价:分离纯化、鉴定及活性评价不同食物来源及药用植物(冬虫夏草、藏红花等)中抗癌、调血压、调血脂、促生长、降血糖等生物活性成分; (iii) 功能食品开发:利用低值水产品、农产品及加工副产物开发新型功能食品及药物,如富含功能性多糖及肽的发酵制品、糖氨聚糖(软骨素、皮肤素)相关产品等。
