个人简介
张虹，女，1962年8月出生于北京，博士，教授，博士生导师。1985年毕业于杭州商学院（现浙江工商大学），于2004年获浙江大学化学博士学位。曾作为访问学者赴美国农业部南方研究中心从事研究工作。1995年12月起任职于浙江工商大学食品与生物工程学院。
研究领域
(i) 食品质量与安全，利用液质联用、气质联用及免疫分析等手段分析及控制食品中的有毒有害成分。如：食品中各种抗生素类、食品添加剂、多环芳烃类等的残留物质及代谢物质分析；双酚A等环氧衍生物在罐头食品涂料、内容物中含量及迁移规律的研究；辐照食品的分析及安全评价等；
(ii) 功能因子评价：分离纯化、鉴定及活性评价不同食物来源及药用植物（冬虫夏草、藏红花等）中抗癌、调血压、调血脂、促生长、降血糖等生物活性成分；
(iii) 功能食品开发：利用低值水产品、农产品及加工副产物开发新型功能食品及药物，如富含功能性多糖及肽的发酵制品、糖氨聚糖（软骨素、皮肤素）相关产品等。
